Ingredients
- 8 oz vegan dark chocolate
- ½ cup coconut cream
- ½ cup freeze-dried blueberries
- 1 teaspoon vanilla extract
- ¼ cup dried wild blueberries
- ¼ cup cocoa powder for coating

Instructions
- Finely chop the dark chocolate and transfer to a medium heatproof bowl.
- In a blender, combine coconut cream and freeze-dried blueberries. Blend until smooth.
- Pour the blueberry-cream blend into a saucepan. Heat over low, stirring occasionally, until just before it simmers (do not boil!).
- Remove from heat and stir in vanilla extract. Pour the mixture over the chopped chocolate and let sit for 30 seconds, then stir until fully melted and smooth.
- Cover the bowl loosely with plastic wrap and refrigerate for at least 2 hours until firm enough to scoop.
- Place cocoa powder in a shallow bowl and line a baking sheet with parchment paper.
- Use a melon baller or small cookie scoop to shape the chocolate mixture. Make an indent in the center, add dried blueberries, and encase in chocolate. Roll into smooth balls.
- Roll each truffle in cocoa powder and place on the prepared baking sheet.
- If the mixture softens, chill for 10-15 minutes to firm up. For a different finish, dip the truffles in tempered dark chocolate instead of cocoa powder.
