Vegan Gingerbread Loaf
Report
This easy vegan gingerbread loaf scream Christmas, and it's super easy-to-make. Tastes just like the Starbucks version but better.

Ingredients
- 2 cups all-purpose flour
- 1 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 tbsp. ground ginger
- 2 tsp ground cinnamon
- 1 tsp. allspice
- 1/2 tsp nutmeg spice
- 1 cup applesauce
- 1/3 cup vegan or regular butter then melted
- 1 cup brown sugar
- 2 egg replacements
- 1 tsp vanilla
- 6 tbsp. almond milk
Glaze:
- 1/2 cup icing sugar
- 1-2 tsp water
Instructions
- Preheat oven to 350F and line a bread tin with parchment paper and lightly grease with cooking oil spray.
- Into a large bowl, combine the flours, baking soda, salt and spices.
- In a medium-sized bowl add the applesauce and whisk in the melted butter, brown sugar, egg replacement, vanilla and almond milk. Whisk just till combined.
- Add the flour mixture to the apple sauce mixture and stir with a wooden spoon to well combine.
- Transfer batter to the baking tin and bake for 50-55 minutes.
- While the loaf bakes, make the glaze by combining the icing sugar and water in a bowl. Stir till combined.
- Cool for 5 minutes in the bread tin and remove and cool completely on the wire rack. Serve with vegan butter or drizzle whole loaf or each piece individually with the glaze!
Notes
- You can use a regular egg if needed. It will cook the same.
- NOTE: use as many or as little spices as you like. The more the better, in my opinion!
