Vietnamese Bánh Mì Sandwich Recipe

A Vietnamese banh mi sandwich is a fluffy baguette laden with chicken, pork, pickled veggies, herbs, and chiles. Savory, rich, and delicious!

Ingredients

  • 4 crusty long bread rolls (See Note 1)
  • 8 tbsp pork and or chicken pate (See Note 2)
  • 8 tbsp Vietnamese Mayo Butter for Bánh Mì or regular mayonnaise (See Note 3)
  • 16 lices roast or grilled pork (See Note 4)
  • 16 lices roast or grilled chicken
  • 4 tsp Maggi seasoning (See Note 5)
  • Vietnamese pickled carrots and daikon
  • 2 cucumbers finely sliced lengthwise into long strips
  • 1 Anaheim green chile seeded and finely sliced
  • 1 large jalapeño thinly sliced into rings
  • 1 cup Fresh cilantro sprigs

Instructions

  1. Slice each bread roll horizontally. On one half spread 2 tablespoons of the paté, and spread 2 tablespoons of the Vietnamese Mayo Butter on the other.
  2. Load the mayo side with 4 slices of the roast pork and 4 slices of the roast chicken. Drizzle 1 teaspoon of the Maggi seasoning over meat and top with a good amount of the pickled carrots and daikon. Spread all evenly across the bread.
  3. Add several pieces of each cucumber slices, green chile pieces and some jalapeno rings.
  4. On the other half with the paté add the cilantro and press the sandwich together and enjoy.

Notes

  • First I would choose a French baguette and make sure it's crusty on the outside (you can always toast in the oven for a few). Often times I've found the inside is dense, so go for one that is light if you can. Sadly Hoagie rolls are too dense. Surprisingly I found, at least around me here in Portland, that the crusty on the outside, fluffy light on the inside rolls, were Mexican bolilllo rolls from my local market's bakery. These would be my second choice.
  • There are so many different patés to choose from, but for this my go to is Three Little Pigs™ Trois Petis Cochons Pork & Chicken Liver Mousse (no, I am not paid by them) that I find at my local Fred Myers. By all means choose whichever brand you prefer as long as it's a smooth, spreadable paté. They also have a Pork & Duck Liver Mousse that works well, too.
  • For that classic Vietnamese flavor make my easy recipe for Vietnamese Moyo butter for Banh Mi.
  • You could go the classic route and use 8 slices Thi Nguoi ("pink ham") OR brawn (aka head cheese) and 8 slices Cha Lua Vietnamese pork loaf OR chicken loaf. Vietnamese Brawn (Thi Nguoi) is like a pink ham with little bits of gelatin and pig ears throughout. Another is a Pork Loaf (Cha Lua) which is similar to Chicken loaf found at most delis. Others include roast pork. Many add a head cheese, which is not a cheese at all, but made with meat from the head of a calf or pig, typically set in aspic and formed into rolls and then it is sliced. I made mine using a paté with roast pork and chicken thinly sliced. Feel free to experiment with these different meats for your banh mi.
  • Maggi is a liquid seasoning mostly used in Europe and Asia. I first had it when cooking with a friend's mother in Cairo! Comparatively, it is like a soy sauce or Worcestershire sauce, but with more umami flavor. It's rich and savory. I pick mine up in most Asian markets. If you can't find, order online, or substitute soy sauce.
