  • 2 cups pineapple 8 ounces, frozen chunks
  • 1 can coconut milk 13.5 ounces) - Shake well, unsweetened
  • ½ cup pineapple juice unsweetened
  • 1 cup ice
  • 2 tablespoons coconut sugar more if necessary

Garnishes

  • 4 wedges pineapple
  • 4 maraschino cherries Optional

Instructions

  1. Place the frozen pineapple chunks, unsweetened coconut milk, pineapple juice, coconut sugar, and ice into a blender.
  2. Blend until smooth. Taste for sweetness and add more if necessary.
  3. If preferred, pour into a glass and garnish with pineapple wedges and Maraschino cherries (if preferred.)

Notes

  • Yields: This recipe yields ~ 32 ounces of virgin colada. Each serving is about 8 ounces.
