Mango Habanero Glazed Chicken
Description
This recipe starts with seasoning chicken thighs with salt and pepper and roasting them until golden and cooked through. The glaze combines diced ripe mangoes, habanero pepper (de-seeded and deveined to reduce heat), honey, apple cider vinegar, and water, simmered on low until the mango softens and the liquid evaporates. The habanero is removed, and the cooked mango mixture is mashed to create a thick, flavorful glaze.
After increasing the oven temperature, the chicken is coated with the mango-habanero glaze and returned to roast briefly, allowing the glaze to caramelize and cling to the chicken skin. The final dish offers a balance of sweet mango flavor with a moderate heat from habanero, complemented by savory chicken.
The chicken is served with brown rice and garlicky ginger carrots, creating a complete meal with contrasting textures and flavors. The honey and vinegar in the glaze add sweetness and acidity to balance the spicy pepper.
Ingredients
- 8 chicken thighs , bone in (skin on or off is fine)
- salt to taste
- black pepper to taste
- 2 large , ripe mangoes
- 1 habanero pepper , destemmed, deseeded and deveined
- 1/4 cup honey
- 1/2 cup apple cider vinegar
- 1 cup water
- brown rice Perfect brand
- carrot garlicky, ginger
Instructions
- Add salt and pepper to the chicken thighs.
- Roast at 400 degrees for 25 minutes or until golden brown and just cooked through.
- To make the glaze add the rest of the ingredients ingredients (from the mangoes down) into the saucepan.
- Cook on low for 15 minutes or until water has evaporated and the mangoes are soft. Remove the habanero and using a potato masher or whisk, mash the softened mixture.
- Raise the oven temperature to 425 degrees.
- Coat the chicken in the sauce and put back in the oven for 5-7 minutes.
- Serve with Brown Rice and Garlicky Ginger Carrots.
