The best summer side dish is here! Watermelon Salad with feta cheese and cucumbers gets a boost of flavor from fresh herbs and lime. Cool and refreshing on a hot day!

Ingredients
- 4 cups watermelon cut into cubes
- 1 cup cucumber diced
- 1 Tablespoon fresh basil chopped
- 1 Tablespoon fresh mint chopped
- 3 ounce feta cheese diced
- 2 Tablespoons olive oil
- Juice of 1 lime
- salt and pepper to taste
Instructions
- Slice the watermelon and cut into 1 inch cubes. Add to a bowl.
- Add cucumbers, basil, mint, and feta cheese.
- Drizzle with olive oil, juice of 1 lime, and stir gently until combined.
- Season with salt and pepper, if desired.
- Refrigerate until ready to serve
Notes
- Store leftovers in airtight container for 3-4 days.
- Using English cucumbers is best, as they don't have the wax coating that regular cucumbers have. If using regular, remove skin and seeds.
- 1 oz of feta cheese is about the same as a pair of dice. You can use the feta cubed, or crumbled on the salad.
- Add 1-2 Tbsp of honey to the olive oil and lime juice for a sweetened dressing.
