Decadent and rich white chocolate cream pie.

Ingredients
- 1 1/2 cups good quality white chocolate chips
- 1 1/4 cups milk
- 1/2 cup cream
- 3 tablespoons cornstarch
- 4 egg yolks
- 2 tablespoons salted butter
- CRUST:
- 2 cups graham wafers or cookie crumbs of your choice
- 113 millilitres (1/3 cup and 2 tbsp) melted butter
- 2 cups whipping cream
- 2 tablespoons white sugar
- 1/2 teaspoons almond flavoring
Instructions
- In a large saucepan over low heat, whisk together the cream, milk and cornstarch.
- Add in the white chocolate chips and melt completely making sure to stir constantly.
- Beat your egg yolks then add some of the hot mixture to the egg yolks and mix it in quickly to temper it.
- Once that is done, add the egg yolks into the hot chocolate mixture, whisking thoroughly and completely.
- Cook until thickened and this does really thicken up.
- Once you have a lovely thick mixture, whisk in the butter until it's melted.
- Set aside to cool while you make the crust.
- Take your crust ingredients and press into a 9 inch pie plate.
- Bake in a 350 degree oven for 10 minutes.
- Remove from oven and cool.
- Take your slightly cooked white chocolate filling and pour into the prepared crust.
- Cover with Saran Wrap and refrigerate.
- Right before you are ready to serve, whip the cream using beaters. Cover the surface of the pie with whipped cream and serve.
