White Chocolate Cream Pie

Decadent and rich white chocolate cream pie.

Ingredients

Servings
  • 1 1/2 cups good quality white chocolate chips
  • 1 1/4 cups milk
  • 1/2 cup cream
  • 3 tablespoons cornstarch
  • 4 egg yolks
  • 2 tablespoons salted butter
  • CRUST:
  • 2 cups graham wafers or cookie crumbs of your choice
  • 113 millilitres (1/3 cup and 2 tbsp) melted butter
  • 2 cups whipping cream
  • 2 tablespoons white sugar
  • 1/2 teaspoons almond flavoring

Instructions

  1. In a large saucepan over low heat, whisk together the cream, milk and cornstarch. 
  2. Add in the white chocolate chips and melt completely making sure to stir constantly. 
  3. Beat your egg yolks then add some of the hot mixture to the egg yolks and mix it in quickly to temper it. 
  4. Once that is done, add the egg yolks into the hot chocolate mixture, whisking thoroughly and completely. 
  5. Cook until thickened and this does really thicken up. 
  6. Once you have a lovely thick mixture, whisk in the butter until it's melted. 
  7. Set aside to cool while you make the crust. 
  8. Take your crust ingredients and press into a 9 inch pie plate. 
  9. Bake in a 350 degree oven for 10 minutes. 
  10. Remove from oven and cool. 
  11. Take your slightly cooked white chocolate filling and pour into the prepared crust. 
  12. Cover with Saran Wrap and refrigerate.
  13. Right before you are ready to serve, whip the cream using beaters. Cover the surface of the pie with whipped cream and serve.
