These delicious white chocolate peppermint bars are the perfect holiday treat! Peanut butter, oats, and chocolate make these a holiday favorite!

Ingredients
- 1 cup creamy peanut butter
- ½ cup honey
- ½ cup unrefined coconut oil
- 2 cups Old-Fashioned Quaker oats
- 1 cup sweetened shredded coconut
- 1 ¾ cups white chocolate chips
- 1 tsp peppermint extract
- candy canes for garnish

Instructions
- Line a 9x13 pan with parchment paper and set aside.
- Melt peanut butter, honey, and coconut oil in a pot over medium-low heat.
- Once melted, remove from heat and add oats, shredded coconut, white chocolate chips and peppermint extract.
- Stir until chocolate is entirely melted.
- Pour into the prepared 9x13 pan and cool in the fridge for about 10 minutes.
- Top with crushed up candy cane pieces then allow to cool until set in the fridge.
- Remove from the pan with the parchment paper and cut into squares.
