Ingredients

Manouche

  • 375 gms all-purpose flour or bread flour; 3 cups
  • 60 ml extra virgin olive oil 1/4 cup
  • 1 tsp salt
  • 140 ml water or a bit more, as needed, lukewarm, 3/4 cup
  • 40 ml milk 2 ½ tbsp
  • 4 gms yeast 1 ½ tsp
  • ½ tbsp sugar or honey

Za’atar Mix

  • 3 tbsp Za’atar Lebanese
  • 60 ml extra virgin olive oil ½ cup

Notes

  • The cooking time depends on your oven and how hot it gets. I slightly overcooked mine and it became a bit brittle.  Ideally, you want the manouche to be crisp but soft enough to roll it if you want to.
