Zucchini and Tomato Sauté with Cotija Cheese and Cilantro

  • 2 tsp olive oil
  • ¼ sweet yellow onion chopped
  • 1 cup grape tomatoes
  • 1 small zucchini chopped
  • 1 clove of garlic minced
  • Sea Salt and Freshly Cracked Pepper to taste

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the onions and cook, stirring often, for 3 minutes.
  2. Add the tomatoes and cook, stirring occasionally for 2 minutes.
  3. Add the diced zucchini and cook, stirring occasionally, for 3-4 minutes, or until the zucchini is fork-tender and the tomatoes are close to bursting.
  4. Add the minced garlic and season with sea salt and freshly cracked pepper, to taste. Cook, stirring constantly,  for 1 minute.
  5. Pour the veggies into a serving bowl then top with cotija cheese and fresh cilantro. Serve immediately.
