15-Minute Lemon Butter Salmon Bites

These Air Fryer Lemon Butter Salmon Bites are the most delicious easy recipe! They're crispy, golden brown bites of salmon tossed in the most delicious lemon garlic butter sauce. They're ready in just 15 minutes and pack the best flavor! Perfect for serving with your favorite sides or piling on top a nice big summer salad!

Ingredients
- 1 lb. salmon filets skinless
- 1 Tbsp Italian seasoning
- 1 tsp salt
- 1/2 tsp black pepper
- 2 Tbsp unsalted butter (28g) melted
- 1 Tbsp lemon juice (15g)
- 3 garlic cloves minced - I used frozen cubes

Instructions
- Preheat the air fryer to 400 degrees F.
- Pat the salmon dry with a paper towel and cut into 1-inch cubes. Add salmon bites to a bowl and spray with cooking spray so all sides are coated. Add the Italian seasoning, salt and pepper and toss to evenly coat.
- Spray air fryer basket with cooking spray. Add the salmon bites to the air fryer basket in an even layer and cook for 6-8 minutes, tossing halfway through, or until the salmon is no longer pink.
- Meanwhile, whisk together the melted butter, lemon juice and garlic to make the sauce.
- Once salmon bites are done, transfer them to a bowl and toss with the sauce. Serve with your favorite sides and enjoy!

- Cooking Tips!
- Make sure salmon is fully thawed if using frozen. To thaw, you can put frozen salmon in the refrigerator overnight. Or, place the frozen piece of salmon in a sealed bag in a bowl of cold water and let it sit for 30 minutes, or until thawed.
- Make sure to pat the salmon dry with a paper towel. This will ensure the cooking oil, and therefore the seasoning, sticks to the salmon well and doesn’t run off from the excess water. Which helps lock in the moisture and also ensures max flavor.
- To ensure that salmon bites cook evenly, be sure to cut into even 1-inch cubes. Also, be sure to shake the air fryer basket (or flip bites if using an air fryer with a tray) halfway though.
- Make sure not to overcook the salmon cubes as this can turn the salmon dry.
- Use fresh lemon juice! I highly recommend using fresh squeezed lemon juice for the best flavor! You can also add a dash of lemon zest to your butter sauce to really enhance the lemon flavor.
- Don't overcrowd the salmon! Depending on the size of your air fryer, you might need to cook the salmon in two batches. Be sure to place the salmon in a single layer without overcrowding to ensure even cooking. The salmon pieces need adequate cooking space to get nice and crispy!
