4-Ingredient Salsa Verde Enchilada Bake

This Salsa Verde Enchilada Bake is a straightforward casserole featuring shredded chicken mixed with pepper jack cheese and salsa verde, all wrapped in flour tortillas. Topped with additional salsa and cheese, it bakes until bubbly and melts into a creamy, mildly spicy dish. It's a flavorful way to enjoy enchiladas without complex preparation steps.

Description

The 4-Ingredient Salsa Verde Enchilada Bake assembles cooked shredded chicken, pepper jack cheese, and salsa verde into a filling that is wrapped in flour tortillas and arranged seam-side down in a baking dish. The dish begins with a thin salsa verde layer on the pan bottom to prevent sticking and add flavor.

The pepper jack cheese provides slight heat and creaminess, melding with the tangy salsa verde and tender chicken during baking at 350°F. The tortillas soak up moisture, creating soft, flavorful enchiladas layered with melted cheese on top. Baking uncovered allows the cheese to bubble and brown slightly while the chicken filling remains juicy.

Optional garnishes such as onion, cilantro, avocado, or tomatoes add fresh elements and color if desired. This bake offers a practical way to serve enchiladas with minimal hands-on time using rotisserie chicken and jarred salsa verde, suitable for casual dinners or meal prep.
