Vegetable Chow Mein
Description
Vegetable Chow Mein combines thinly sliced cabbage, broccoli florets, celery, carrots, and minced garlic quickly cooked in oil until vegetables soften but retain some bite. The sauce is a blend of sweet soy sauce (kecap manis), low sodium soy sauce, oyster sauce, and water, providing salty, sweet, and umami flavors.
Cooked chow mein noodles are added to the vegetable mixture and tossed to coat evenly in the sauce. Optional bean sprouts add another layer of crunch and freshness. Sesame seeds may garnish the dish for subtle nuttiness.
Kecap manis can be substituted with a homemade mix of soy sauce and molasses or brown sugar with a pinch of ground anise to approximate its flavor if unavailable. The dish comes together quickly and is suitable as a vegetarian main or side.
Ingredients
- 2 tablespoons vegetable oil
- 1 cup cabbage thinly sliced
- 2 cups broccoli florets
- 1 cup celery thinly sliced
- 1 carrot thinly sliced
- 2 cloves garlic minced
- 2 tablespoons Sweet soy sauce aka Kecap Manis
- 2 tablespoons soy sauce low sodium
- 4 tablespoons oyster sauce
- 1 cup water
- 12 ounces Chow Mein noodles cooked a minute shy of directions
- 6 ounces bean sprouts optional
- sesame seeds for garnish optional
Instructions
- Heat a large pan or wok on medium heat with the oil add in the cabbage, broccoli, celery and carrots.
- Cook 2-3 minutes until wilted, add the garlic and cook for an additional 30 seconds.
- Add the soy sauce, sweet soy sauce, oyster sauce and water and bring to a boil for 1 minute.
- Add in the pasta, bean sprouts and toss to coat.
Notes
- Make a simple homemade kecap manis substitute by mixing soy sauce with molasses or dark brown sugar and a small pinch of ground anise for flavor.
- Use cooked chow mein noodles slightly undercooked by a minute to maintain texture when stir-fried.
- Optional garnishes include bean sprouts and sesame seeds for additional crunch and nutty flavor.
