5-Ingredient Zucchini Noodles
Description
This recipe highlights spiralized zucchini cooked briefly in olive oil with minced garlic to add subtle aroma and flavor. The noodles are seasoned with sea salt and black pepper, then cooked until just slightly wilted but still retaining some firmness. Crumbled feta cheese and chopped fresh dill are sprinkled on top, contributing a creamy tang and bright herbal notes respectively.
The flavor profile is light and fresh with the mild sweetness of zucchini paired with the salty richness of feta. The garlic oil adds warmth without overpowering the dish. It can be served immediately as a warm side or chilled for a refreshing salad. Topping with a poached or fried egg adds protein if desired.
Notes mention checking feta saltiness before adding extra salt, and that the dish is versatile to serve warm or cold. The simple ingredient list and quick cooking make it an approachable way to enjoy zucchini noodles.
Ingredients
- 2 tablespoons olive oil
- 1 clove garlic minced
- 4 zucchini spiralized with the skin on, medium sized
- ¼ teaspoon sea salt
- ¼ teaspoon black pepper
- ½ cup feta cheese crumbled
- 2 tablespoons dill coarsely chopped, fresh
Instructions
- Heat oil in a large skillet in medium heat. Add in the garlic clove and cook, stirring constantly, until lightly browned, 30 seconds or so.
- Add in the zucchini “noodles” and season with salt and pepper. Cook until slightly wilted, 4-5 minutes. Make sure to turn it a few times with tongs (or two forks) to ensure even cooking.
- Divide the zucchini noodles amongst two plates. Sprinkle with feta cheese and dill. Taste for seasoning, and add in if necessary.
- Serve immediately
Notes
- Adjust added salt after tasting feta cheese, which varies in saltiness.
- This dish can be served warm immediately or chilled as a salad.
- For added protein, consider topping with a fried or poached egg.
