Description

Filipino Escabeche highlights a whole tilapia seasoned with salt and fried to produce a golden crispy exterior. The accompanying sauce combines vinegar and dissolved cornstarch simmered with sugar, bell peppers, carrots, ginger, garlic, and onions. Optional ketchup adds color without significantly altering the flavor. This sauce thickens to coat the fish, providing a sweet and sour tang that contrasts with the crispy texture of the fried tilapia.

Serving the fish with the hot, thickened sauce poured on top creates a dish that is visually appealing and flavorful. It can be enjoyed as a centerpiece for lunch or dinner, paired with steamed rice to balance the tangy sauce.
