5-Minute Lemon Basil Pesto with Almonds
Description
The "5-Minute Lemon Basil Pesto with Almonds" starts by carefully peeling lemon zest to avoid bitter pith, then pulsing it with raw almonds, garlic, and fresh lemon juice to create a coarse base. Fresh basil and parsley are added next, with olive oil drizzled in while blending to emulsify the mixture into a sauce with fresh herb aroma and bright citrus notes. Salt seasons the pesto, and black pepper can be added to taste.
This pesto is versatile and fresh, brightened mainly by lemon and balanced by the creamy texture of almonds and olive oil. Its coarse texture suits spreading or stirring into dishes. The blend of herbs is lighter and more citrus-forward than a traditional pine nut pesto.
Prepared pesto stores well in an airtight container in the refrigerator for about a week, maintaining its vibrant flavor for use as a sauce or condiment during that time. The simple ingredients and fast preparation make it suitable for quick culinary applications where a fresh lemon-herb flavor is desired.
Ingredients
- 3 lemon zested, ½ cup packed zest peels, large
- ⅓ cup almond raw
- 2-3 cloves garlic
- 5-6 Tablespoons lemon juice use the lemons you zested, fresh
- ⅓ cup basil tightly packed, fresh
- 2 Tablespoons parsley fresh
- 4 Tablespoons extra virgin olive oil more as desired
- ¼ teaspoon salt more to taste, fine sea salt
- black pepper optional, to taste, freshly ground
Instructions
- Peel the lemon zest using a vegetable peeler, being careful not to get too much of the white pith as it is bitter.
- Place the lemon peels, almonds, garlic, and lemon juice in the bowl of a food processor and pulse until a coarse mixture forms.
- Add basil and parsley. Slowly drizzle the olive oil in as the food processor is running, until fully combined. Stir in the salt and pepper to taste.
- Store in an airtight container in the fridge for up to a week.
