Description

This Acai Bowl starts with partially thawed acai purée combined with frozen banana chunks, frozen blueberries, and sweet fruit juice to aid blending. Using a high-powered blender or food processor, the ingredients are blended at low speeds or pulsed to a smooth but thick consistency. The mixture’s thickness can be adjusted with additional juice if needed.

The chilled smoothie base delivers a creamy, fruity texture featuring the distinctive berry flavors of acai and blueberries balanced by the natural sweetness of banana and juice. Once blended, the bowl is topped with honey or vanilla-flavored granola and fresh fruit pieces, which add crunch and freshness to the smooth base.

Ingredients

Servings
  • 1 large banana peeled, cut into 1-inch chunks and frozen, ripe
  • 2 (3.5 oz) pkgs Acai purée thawed about 1/3 of the way under warm water, unsweetened, frozen
  • 1/2 cup blueberries frozen
  • 1/2 cup fruit juice then more as needed, sweet

Toppings

  • granola honey or vanilla flavored
  • honey to taste (optional
  • Fruit fresh, for topping

Instructions

  1. Place bowls in freezer while preparing mixture.
  2. Hit acai (in sealed packages) with a meat mallet to break into pieces.

Blender instructions:

  1. To a high powered blender, add acai, banana pieces, blueberries, and juice.
  2. Blend on a moderately low speed until smooth (lower speed works better for this thickness). If needed you can add a little more juice, and stir occasionally if it's too thick to blend.

Food processor instructions:

  1. Add bananas to food processor, cover with lid and hold processor down (it will want to jump!) then pulse in bursts to break into tiny bits.
  2. Add blueberries, pulse in bursts to break into bits. Add acai and juice and pulse to a smooth puree.
  3. Pour mixture into chilled bowls. Top with granola, fruit and drizzle with honey if desired.
