Ingredients

  • 1 1/2 cups flour
  • 2 teaspoons baking powder
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons sugar
  • 3 tablespoons butter melted, unsalted
  • 2 cups buttermilk low-fat
  • 2 large egg beaten
  • 1 teaspoon vanilla extract

Instructions

  1. Sift the flour, baking powder, baking soda, salt, and sugar twice into a large bowl.
  2. In a medium bowl whisk together butter, buttermilk, eggs, and vanilla extract until smooth.
  3. Add in flour mixture and whisk until just combined.
  4. Working in batches, scoop 1/3 cup batter onto lightly buttered griddle on medium heat and cook until bubbles form and the edges start to dry out, about 2-3 minutes.
  5. Note: You can cook a couple pancakes at a time, just give them enough room they aren't touching and you can flip them easily.
  6. Flip and cook for 20 seconds or until golden brown on the bottom.
