This AIP Coconut Milk Matcha Latte is a quick and easy addition to your morning routine. This matcha latter with coconut milk recipe also includes instructions on how to turn it into a AIP Matcha Smoothie or Iced Matcha Latte.

Ingredients
- 1 cup water
- 4 teaspoons matcha powder
- 2 cups coconut milk
- 2 scoops collagen peptides optional
- 1 tablespoon honey

Instructions
- Boil the water in a small saucepan. Add the matcha powder and honey then stir to combine. Set aside.
- Add the coconut milk to a small saucepan and heat over low heat. Do not bring to a boil. You don’t want to burn the coconut milk, you just want it warm.
- Next pour equal amounts of the matcha mixture into two mugs. Then repeat but with the hot coconut milk. If using add 1 scoop of the collagen peptides to each mug. Using a milk frother, stir to combine. Serve immediately.
Notes
- Make sure to use coconut milk that’s AIP friendly. I always use this brand.
- I use a milk frother to quickly stir and combine my matcha. This is the one I used.
