Ingredients
- 1 teaspoon butter for greasing the pan
Dry Ingredients
- 1 cup all-purpose flour or sub with whole wheat flour
- 1 pinch salt
- 2 tablespoon matcha powder
Wet Ingredients
- 1 cup milk or plant-based milk
- 2 large eggs
- ¼ cup water cold
- 2 tablespoon white granulated sugar or maple syrup/honey
- 1 tablespoon butter melted
- 1 teaspoon vanilla extract
Instructions
- In a large mixing bowl, whisk together the flour and salt. Sift in the matcha powder and whisk it into the flour mixture.
- Then add in the wet ingredients. Whisk together until batter comes together. Do not over mix. It should be runny and not thick.
- Grease a medium size pan (about 8-inches wide) and bring to medium heat.
- Once pan is hot, pour ⅓ cup into the pan. Swirl the batter to form a thin crepe. If you have a crepe spreader that would be the best tool to help flatten the batter. Fry until the bottom is cooked.
- Flip over and fry on the other side until cooked. Repeat this for the remaining batter.
- Enjoy with your favourite toppings, such as nutella, nut butter, maple syrup, honey, sugar and fresh fruit (like bananas or berries).
