Air Fry Butternut Squash With Feta Cheese

Surprisingly easy to make, this air fried butternut squash should be served on your roast menu because it doesn’t take ages to cook. And it’s so appetizingly flavourful that you can even serve it as a snack.

  • 2 pounds butternut squash about medium sized.
  • 1 teaspoon harissa powder.
  • ½ teaspoon garlic powder.
  • 2 tablespoons olive oil.
  • Salt and pepper to season.
  • 0.88 ounce feta cheese.
  • a handful of walnuts optional.

Instructions

  1. Peel, scoop the seed and cut the butternut squash into 1-inch chunks. 
  2. Place the squash chunks in a mixing bowl. Add harissa powder, garlic, and season with salt and pepper. Stir well until all pieces are coated with spices.
  3. Preheat your air fryer to 190°C/ 375°F.
  4. Drizzle the oil over butternut squash, and stir well again.
  5. Arrange the squash pieces in the air fryer basket. 
  6. And cook the squash for about 20 minutes. Don’t forget to check and flip the butternut every now and again. I do it about three times to ensure all pieces are cooked evenly. 
  7. While the butternut squash is cooking, roast the walnuts on a frying pan until crispy. Chop to your desired size.
  8. When the squash is cooked, place it on a serving dish. Then crumble the feta cheese over it and scatter chopped walnuts on it. 

Notes

  • The easy way to prepare the butternut squash is by cutting it in quarters. First, cut it in halves, and then half each piece. This way, it will be easier to deseed and peel it.
  • Using nuts is optional. If you want, you can choose different nuts. Though I personally think walnuts, pecan nuts or cashew nuts are the best options for butternut squash, feel free to use any nuts you like. 
  • Pan roasting the nuts a little while will make a massive difference in the taste and crispiness of nuts. So yeah, don’t skip it.
