Air Fryer Carrots [Two Ways!]

Sweet or spicy air fryer carrots make an absolute winning side dish. Simple to prepare, two incredible flavours, and a perfect veggie to add to your dinner rotation.

Ingredients

  • 1 lb carrots peeled and chopped into 1 inch pieces

Sweet Version

  • 3 tablespoon maple syrup
  • 1 teaspoon cinnamon
  • ¼ teaspoon sea salt
  • 1 tablespoon melted vegan butter or margarine optional

Spicy Version

  • 2 tablespoon avocado oil or sub for veggie broth to make it oil free
  • ½ teaspoon garlic powder
  • ½ teaspoon sea salt
  • ½ teaspoon dried parsley
  • ¼ teaspoon ground black pepper
  • teaspoon cayenne pepper

Instructions

  1. Peel and chop your carrots into approx. one inch pieces and place them in a mixing bowl.
  2. Then, depending on which version you're making (sweet or spicy), add each of the ingredients to the bowl and mix well to evenly coat the carrots.
  3. For the sweet version only, place the coated carrots in an oven safe dish that fits inside your air fryer basket. (So you don't lose all the syrup, and the carrots come more caramelized this way.)
  4. For the spicy version, transfer the coated carrots directly into the basket.
  5. Cook at 400 degrees F for 15-18 minutes, or until tender. Enjoy!

  • The nutritional information is for one quarter of the sweet version, including the optional butter.
  • The savoury/spicy version has 110 calories for one serving. (one fourth)
  • Cut your carrots in uniform sized pieces for even cooking. If you have some larger pieces, they won't be as tender.
  • Cooking time will vary depending on the model you're using, and the size you cut all your carrots, so check on the while they're cooking to get them just right.
  • Use dried herbs over fresh as they tend to hold up better in this recipe.
  • For less spice, omit the cayenne pepper, or increase to ¼ teaspoon for even spicier air fryer carrots.
  • Leftovers keep 2-3 days in a sealed container in the refrigerator. Reheat in the oven or toaster oven for best results.
