Ingredients

  • 2 pound pork belly [0.91 kg]
  • 2 limes (plus some extra lime wedges for garnishing)
  • 1 teaspoon oregano (dry, ground)
  • 2 teaspoons garlic powder
  • 1 tablespoon salt
  • 2 teaspoons onion powder
  • 1 teaspoon pepper (freshly-cracked, or ground)

Instructions

1. Chopping the meat

  1. Cut the meat into bite-sized pieces.

2. Seasoning

  1. Squeeze the lemon juice over the meat. Combine with all the remaining ingredients. Stir to coat the meat in the seasonings and lime juice.Let it rest covered for 25 minutes in the fridge.

3. Cooking

  1. To cook in the air fryer, preheat the air fryer to 350 ºF [175ºC]. Place the meat pieces in the air fryer bowl, skin-side up. Cook for 25 minutes, or until they turn a golden-brown color.To cook in the oven, preheat the oven to 350 ºF [175ºC]. Place the meat on a wire rack, skin-side up. Cook for 25 to 30 minutes, or until they turn a golden-brown color.

4. Serving

  1. Remove from the oven and serve with tostones (classic, or air fried) and some lime wedges.

Notes

  • Because a combination of fat, seasonings, and meat juices will accumulate at the bottom of the air fryer base, I suggest you line the bottom (not the basket, just the base where the basket sits) with a circle of aluminum foil or parchment paper to make it easier to clean later on.
