Air Fryer Chicken Burrito Bowl

Enjoy a healthy air fryer chicken burrito bowl for two tonight. Loaded with all your burrito bowl favourites including air fryer chicken breast, avocado, black beans, lettuce, cherry tomatoes, cucumber, sweetcorn, mixed peppers, cheese, and salsa.

  • 450 g Mini Chicken Breast Fillets
  • 120 g Frozen Mixed Peppers
  • 150 g Frozen sweetcorn
  • 150 g black beans drained
  • 100 g reduced fat grated cheddar cheese
  • ½ iceberg lettuce
  • 1 medium cucumber
  • 7 cherry tomatoes
  • 1 medium avocado
  • 2 Tbsp salsa
  • 2 Tbsp Fat Free Greek Yoghurt
  • 1 Tbsp Mexican seasoning
  • salt & pepper

Instructions

  1. Place your chicken breast mini fillets into the air fryer basket and season well with salt, pepper, and Mexican seasoning. Air fry for 10 minutes at 180c/360f. Then add in mixed frozen peppers and cook for a further 4 minutes.
  2. Start making your salad by adding a big lettuce layer first and then adding in sliced cucumber and cherry tomatoes that have been halved.
  3. Add frozen sweetcorn in a ramekin and place in the air fryer with the partly cooked peppers. Cook for a further 3 minutes at 180c/360f.
  4. Slice chicken and avocado and drain the black beans and add to the burrito bowl.
  5. Add in the mixed peppers, the sweetcorn, the grated cheese, then last add on top the salsa and the Greek yoghurt before serving.

Notes

  • Quantity. We made enough to feed two people for dinner. You can also split this recipe into little containers and use it for meal prep for the week.
  • Healthy. This is a healthy burrito bowl. Therefore sour cream is swapped for fat free Greek yoghurt and we are using reduced fat cheddar cheese.
  • Swaps. The greatest thing about this healthy burrito bowl is that you can swap many of the ingredients to make it your own. You can also easily make it vegetarian by swapping the chicken for quorn or tofu.
