Air Fryer Half Leg of Lamb

This air fryer half leg of lamb recipe is so easy and yields perfectly cooked lamb that's succulent, tender and full of flavor. The crispy roast potatoes cook with the lamb to round off this wonderful meal.

  • 1.3 kg (2.8 lbs) half leg of lamb , bone in

For the marinade

  • 4 garlic cloves peeled
  • 2 tbsp rosemary leaves fresh
  • 4 tbsp olive oil
  • 1 tbsp white wine vinegar or apple cider vinegar
  • 1 tbsp dried oregano or mixed Italian herbs
  • 1 tsp garlic granules
  • 1 tsp salt
  • 1 beef stock cube (or 2 tsp beef bouillon powder)

For potatoes

  • 8 potatoes , skin on, cubed
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • ½ tbsp lemon juice or to taste
  • Salt and freshly ground black pepper

Instructions

  1. Blitz the garlic cloves, rosemary, olive oil, vinegar, stock cube, salt, herbs and seasonings in a mini chopper.
  2. Lay two large pieces of foil on your worktop. Place the half leg of lamb in the middle and pour the marinade over it, turning over to cover both sides. Tightly wrap the foil to encase the lamb.
  3. Preheat the air fryer to 190°C (375°F). Place the foil-wrapped lamb in the air fryer basket and roast for 40 minutes, turning over halfway through.
  4. Remove the lamb from the air fryer and set aside. Add the cubed potatoes into the air fryer basket. Drizzle with olive oil and season with salt and pepper. Sprinkle with dried oregano and drizzle with the lemon juice. Shake to coat.
  5. Unwrap the leg of lamb and position in the basket, nestling it among the potatoes (move the potatoes aside to make space for it).
  6. Roast for a further 30-40 minutes or until the lamb is cooked to your liking. I recommend roasting until medium, 70-75°C (157-167°F) when checked with a meat thermometer at the thickest part, avoiding the bone.
  7. Place the lamb on a butcher's block and cover loosely with foil. Rest for 10 minutes before slicing to allow for the juices to redistribute. Any juices released during resting (and any accumulated in the basket) can be used to drizzle over the lamb when serving.
  8. Pierce the potatoes with a knife to check whether they are cooked through. They might need a little extra time after the lamb is done and resting. Add 5-10 minutes to the cooking time, or as needed.
  9. Carve the lamb and serve it with the potatoes and a Greek salad on the side.
