Description
Akara aka Banana Fritters is a Sierra Leonean recipe made by pureeing overripe bananas and mixing them with rice flour, baking powder, grated nutmeg, a pinch of salt, sugar, and water. The mixture forms a drop-like batter consistency suitable for frying. Cooking involves deep frying dollops of the batter in oil heated over medium flame, turning once after about a minute, until the fritters are golden brown on both sides.
The fritters result in a crisp outside and a soft, sweet interior with warm aromatic notes from the nutmeg. The balance of banana and rice flour provides structure and tastes that reflect the overripe banana's natural sweetness and texture.
They are typically served with gravy or sweet chili sauce to complement the sweet and mild spiced fritters. The recipe makes up to about 20 fritters, providing a good quantity for a snack or side.
Cooking over medium heat is essential to prevent burning. After frying, press the fritters gently between paper towels to remove excess oil before serving for a less greasy finish.
Ingredients
- 4 banana medium, overripe
- 160 g rice flour 5.6 oz
- 1 baking powder heaped tsp
- 1/2-1 tsp nutmeg grated
- salt a pinch
- 3 tbsp sugar
- 2-4 tbsp water
- cooking oil for deep frying
Instructions
- Peel the bananas, add them to a blender and whizz until pureed.
- Transfer the pureed banana to a bowl and mix in all the ingredients plus 2 tbsp of water.
- The batter should have a drop-like consistency but if not then mix in the other 2 tbsp of water.
- Heat the oil over medium a medium flame and drop tablespoons full of the batter into the oil.
- Cook the akara for 1min then turn round and cook on the other side for another min until golden brown.
- Remove the akara and drain them on paper kitchen towels.
- Continue until all the batter is done.
- Serve with some gravy or sweet chilli sauce.
Notes
- Maintain medium heat while frying to avoid burning the fritters.
- Press cooked fritters between paper towels to remove extra oil for a lighter texture.
- The batter should be thick but drop easily; adjust water quantity as needed.
- Yields approximately 20 fritters, suitable for sharing or snacking.
