Almond Butter Oatmeal Recipe

This Almond Butter Oatmeal Recipe combines rolled oats cooked in water with vanilla and rich almond butter for a creamy texture. Caramelized bananas add a sweet, caramel flavor and soft texture, enhanced by a touch of brown sugar and coconut oil. The dish is versatile for breakfast or a snack and can be topped with chopped almonds, maple syrup, or milk to suit your taste.

Description

The Almond Butter Oatmeal Recipe makes a creamy, comforting breakfast by simmering rolled oats in water with vanilla and stirring in almond butter for richness. Caramelized bananas, prepared by frying sliced ripe but firm bananas in coconut oil and brown sugar until golden, add a sweet, soft contrast. The oats can be blended for extra creaminess if desired. Serving the oatmeal topped with bananas and optional chopped almonds provides a mix of creamy and crunchy textures, enhanced by the natural sweetness of maple syrup and the smoothness of milk or a milk alternative. This recipe offers a satisfying start to the day with a balanced blend of nutty, sweet, and creamy flavors.

Ingredients

Servings
  • 2 cups water
  • 1 cup rolled oats
  • 1 teaspoon vanilla
  • ¼ cup almond butter
  • 1 tablespoon coconut oil
  • 1 medium banana ripe but firm
  • 2 teaspoons brown sugar or coconut sugar
  • almonds to serve, chopped almonds; milk of choice
  • almond butter
  • maple syrup
  • milk

Instructions

  1. Place the water, rolled oats, and vanilla in a small pot over high heat. Bring it to a boil and then reduce the heat to low, cover, and simmer for 10 minutes. Add the almond butter to the pot and stir briskly for 1 minute. Continue to cook for 3-4 more minutes, or until the oats are soft.
  2. While the oats are cooking, make the bananas. Melt the coconut oil in a small frying pan over medium-high heat. Slice the bananas and sprinkle the brown sugar over both sides. Add them to the pan in a single layer and fry until they're golden brown, about 1-2 minutes. Flip the bananas over and let them caramelize on the other side, about 1-2 minutes more.
  3. Optional step: For super creamy almond butter oatmeal, place the oatmeal into your blender and blend on high until smooth.
  4. Divide the almond butter oatmeal between 2 bowls and then top with the caramelized bananas and any or all of the toppings
