Amish Chicken and Corn Casserole

  • ¼ cup salted butter
  • cup all-purpose flour
  • ½ teaspoon celery salt
  • ¾ teaspoon kosher salt
  • 2 cups milk (I use 2%), at room temperature
  • 2 cups chopped, cooked chicken
  • 2 cup corn kernels (fresh, frozen, or canned)
  • ½ cup Ritz cracker crumbs mixed with 1 tablespoon melted butter

Instructions

  1. Preheat oven to 350°F. Grease a 2-quart baking dish and set aside. In a large skillet, melt the butter over medium heat. Sprinkle with flour and whisk constantly for 1 minute. Add the celery salt and kosher salt; whisk to combine. Slowly add the milk, whisking constantly, until combined. Bring the sauce to a simmer and cook, whisking constantly, for 1 minute. Remove from the heat.
  2. Add the chicken and the corn to the sauce; stir to combine. If the sauce seems too thick, just add a little bit of extra milk until it reaches the desired consistency. This is also a great time to taste the mixture and season with any additional herbs or spices that you might enjoy.
  3. Transfer the mixture to the prepared baking dish. Sprinkle the buttered cracker crumbs over top.
  4. Bake, uncovered, until hot and bubbly on the inside and browned on top, about 25-30 minutes.

For instance, add fresh herbs or dried herbs like parsley, rosemary, thyme, basil, oregano, or chives.
