Amish Friendship Carrot Cake

For the cake:

  • 1 cup Amish sourdough starter
  • 2/3 cup vegetable oil
  • 3 large eggs
  • ½ cup milk
  • ½ teaspoon vanilla
  • 1 cup granulated sugar
  • 2 cups flour
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 1 ½ teaspoon baking powder
  • 2 teaspoons cinnamon
  • 1 cup carrots (finely chopped)
  • 2/3 cup shredded coconut

For the frosting:

  • 4 ounces cream cheese
  • 1/2 cup salted butter
  • 1 3/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup Chopped Pecans (optional, for topping)

Instructions

Make the cake:

  1. Preheat the oven to 325 degrees Fahrenheit.
  2. In a large bowl, combine the starter, oil, eggs, milk, vanilla and sugar. Mix well.
  3. Add the flour, salt, baking soda, baking powder and cinnamon. Mix just until combined, scraping the bowl as needed.
  4. Fold the carrots and coconut into the batter.
  5. Spray a 9x13 baking pan with cooking spray.
  6. Pour the batter into the pan.
  7. Bake for about 35 minutes or until the a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool.

Make the frosting:

  1. Using an electric mixer, mix the butter and cream cheese, scraping down the sides as needed, until the mixture is light and fluffy. This will take about 3 minutes.
  2. With the mixer on low speed, add the powdered sugar, 1/2 a cup at a time, until it is thoroughly mixed.
  3. Add the vanilla and beat the frosting on medium speed for about 2 minutes.
  4. Spread the frosting over the cooled cake.
  5. Sprinkle with chopped pecans if desired.
