Ingredients
- 1/2 cup butter room temperature
- 1/2 cup oil
- 1/2 cup white sugar
- 1/2 cup powdered icing sugar
- 1 egg
- 2 teaspoons vanilla paste
- 2 1/4 cup flour
- 1/2 teaspoon baking soda
- 1 teaspoon cream of tartar

Instructions
- To Prep: Preheat oven to 375°F and line a cookie sheet with parchment paper.
- With stand mixer or electric hand mixer, beat together butter, oil, sugar and powderd sugar.
- Add the egg and vanilla paste and mix until just incorporated.
- In a separate mixing bowl, whisk together the flour, baking soda, and cream of tartar.
- Add the bowl of dry ingredients to the bowl of wet ingredients and mix until combined.
- Scoop out balls of cookie dough about 1 Tablespoon in size and place onto prepared pan, about 2 inches apart.
- Bake for 8 minutes, until the edges start to turn golden brown.
- Allow to cool on the cookie sheet for 2 minutes before transferring to a cooling rack.
