Antipasto Grilled Shrimp Salad

This Grilled Shrimp Salad is a delicious way to get in those greens! If you love an antipasto platter, you'll love this salad!

Ingredients

Servings

For the shrimp:

  • 1 lb Shrimp 21-30 ct, peeled and deveined, large
  • 1/3 cup Italian salad dressing I used Olive Garden dressing
  • 1/2 teaspoon black pepper ground
  • 1/2 teaspoon dried parsley flakes

For the salad:

  • 1 bag italian salad mix or Spring Mix
  • 1/2 bunch basil torn, fresh leaves
  • 1 salad dressing feta cheese, calamata olives, red peppers, Zesty Delallo SaladSavor brand
  • 1 salad dressing white cheddar, artichoke hearts, sundried tomatoes, Sharp Delallo SaladSavor brand
  • 1/4 red onion sliced thin
  • Italian dressing for serving, extra

Instructions

  1. Place shrimp, Italian dressing, black pepper and parsley into a bowl and toss. Marinade briefly while grill preheats.
  2. Preheat indoor grill {or outdoor} over medium high heat.
  3. Grill shrimp 2-3 minutes per side or until bright pink and opaque. Remove from heat and set aside.
  4. Toss lettuce with basil leaves. Top with Delallo Salad Savor ingredients, onions and cooked shrimp. Drizzle over desired amount of Italian dressing and serve.
