Description

For the salad:

  • 6 cups salad greens mixed
  • 1/2 cup salami chopped
  • 1/2 cup prosciutto chopped
  • 1/4 cup olive I used kalamata
  • 1/2 cup roasted red pepper jarred or homemade, coarsely chopped
  • 1 cup chickpeas rinsed and drained, canned
  • 1/2 cup artichoke hearts drained, marinated
  • 1/2 cup mozzarella drained, marinated, balls
  • 4-6 pepperoncini pepper small
  • parsley optional garnish, chopped

For the dressing:

  • 1/4 cup olive oil
  • 1 teaspoon Dijon mustard
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon oregano dried
  • salt to taste
  • black pepper to taste

Instructions

  1. For the dressing: Place all of the salad dressing ingredients in a jar and shake until thoroughly combined. Set aside.
  2. Place the lettuce in a large bowl; toss with half of the dressing.
  3. Arrange the meats, cheese, olives, chickpeas and vegetables on top of the greens.
  4. Drizzle the remaining dressing over the top and serve. Garnish with parsley if desired.

Notes

  • Use any preferred lettuce; pre-washed mixed greens work well.
  • Marinated artichoke hearts and mozzarella balls enhance overall flavor.
  • For serving, arrange toppings separately so diners can select preferred combinations.
