Apple and Cottage Cheese Pancakes
Description
This recipe blends flour, egg yolks, grated peeled apples, cottage cheese, honey, cinnamon, and salt into a batter. Separately, egg whites are whipped to soft peaks and folded carefully into the mixture to incorporate air for a lighter texture. Pancakes are cooked in a hot oiled nonstick skillet for several minutes each side until golden.
The cottage cheese adds moisture and a subtle tang, balancing the sweetness from honey and apples. The grated apples provide texture and fruity flavor. Cooking on medium-high heat achieves a golden crust while keeping the interior fluffy. Serving options include dusting with powdered sugar, sour cream, or jam.
Ingredients
- 4 egg whites and yolks separated
- 1 ¼ cup all-purpose flour
- 3 apple cored and grated, medium, peeled
- 1 cup cottage cheese small curd
- 1 Tbsp honey
- ¼ tsp cinnamon
- 1 pinch salt
- grapeseed oil or extra light olive oil, to saute
- powdered sugar optional, for dusting
Instructions
- In a large bowl, mix 1 ¼ cup of flour, 4 egg yolks, 3 grated apples, 1 cup of cottage cheese, 1 Tbsp honey, ¼ tsp cinnamon and a pinch of salt, stir until blended.
- In a separate, clean bowl, beat egg whites 1.5 minutes on high speed until foamy and soft peaks form. Fold the egg whites carefully into in the rest of the mix with a spatula.
- Add 2-3 Tbsp oil to a large nonstick skillet and preheat it to a med/high. Drop a tablespoon-full of the batter onto the hot oiled skillet and press it down slightly. Saute for 3-4 minutes per side until golden on each side.
- Serve with powdered sugar, sour cream or your favorite jam. Enjoy!
