Apple Cinnamon French Toast Recipe

Apple Compote:

  • 3 large red apples , peeled, cored and diced
  • 1 cup light brown sugar
  • 1/2 cup water
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla
  • 1 cinnamon stick

French Toast:

  • 1 large loaf french bread , cut into 1 inch slices
  • 6 eggs
  • 1 tablespoon milk
  • 1 teaspoon nutmeg
  • 1 teaspoon ground cinnamon
  • Cooking spray, butter

Toppings:

  • candied walnuts
  • Whipped Cream
  • powdered sugar icing

Instructions

Apple Compote:

  1. In a large, heavy saucepan, combine the cut apples, brown sugar, water, lemon juice, vanilla and a cinnamon stick.
  2. Heat the mixture over medium heat. Stir with a wooden spoon until the apples are well coated, the sugar has melted and the apples are starting to soften, approximately 15-18 minutes. They will not be fully soft. Keep the mixture warm. 

French Toast:

  1. Heat the oven to 200°F. Heat the electric griddle to just below 350°F.
  2. While preheating, beat the eggs, 1 tablespoon of the milk, nutmeg and cinnamon in a shallow baking dish or pie plate.
  3. Spray the griddle with cooking spray or melt a small pad of butter. Working in batches of 4 slices, dredge a slice of French bread in the egg batter and place onto the griddle. Allow to cook on each side for 3-4 minutes or until light brown. Flip and cook on opposite side for 3-4 minutes. Remove to baking sheet and place in oven to keep warm. Repeat with the remaining bread.

Assemble:

  1. Top the French toast with apple compote, powdered sugar icing, chopped walnuts and whipped cream, if desired.
