Apple Cinnamon Waffles with Honey (Gluten-Free & Vegetarian)

Easy, vegetarian apple cinnamon waffles with honey. These bad boys are gluten-free and perfect for breakfast or brunch.

Ingredients

Servings

For the Waffles:

  • 1 cup oat flour or gluten-free flour
  • 2 tsp baking powder
  • 1/2 tsp salt sea salt
  • ½ teaspoon cinnamon powder
  • 1 banana ripe
  • 2 creamed honey
  • 2 flax eggs or 1/2 cup apple sauce
  • 1 tbsp. vanilla
  • 2 tbsp. coconut oil melted
  • 1 1/2 cup almond milk

For the Apples:

  • 1 tbsp. butter vegan or regular butter of choice
  • 1/4 cup creamed honey
  • 2 apple thinly sliced, medium-sized
  • 1 tbsp. lemon juice
  • 1 tsp cinnamon powder
  • sea salt dash

Instructions

For the Apples:

  1. Add the ingredients for the apples into a medium-sized sauce pan and cook on low heat for 15 minutes.  Stirring often to avoid burning.  Prepare waffles in the meantime.

For the waffles:

  1. Preheat your waffle maker/iron.
  2. Add all your ingredients for the waffles into a high-speed blender and blend till smooth. You want the batter to be pourable.  Not too runny, not too thick.
  3. Lightly grease your preheated waffle maker and pour the batter into each waffle mold.  Proceed as per manufacturer directions.
  4. Cook until there seems to be no steam leaving the waffle iron.  Repeat till you've used all the batter.
  5. Once cooked, serve waffles with a generous serving of apples! Enjoy!

Notes

  • Pancakes: These can easily be cooked like pancakes.  Pour your desired amount of batter to shape a pancake and cook till bubbly or around 2 minutes on each side.
  • Apples: This is totally adaptable.  Have fun with fruits like berries, peaches, or even bananas!
