The fresh flavors in this easy strawberry arugula salad taste like summer! Toasted almonds and creamy goat cheese add crunch and extra flavor.

Ingredients
- 6 cups arugula
- 10 basil leaves, chiffonaded (rolled and thinly sliced)
- 1 ½ cups sliced strawberries
- ⅓ cup sliced almonds toasted in a dry skillet
- 1 ¾ ounces soft goat cheese (chevre) crumbled
The dressing:
- 1 ½ tablespoons balsamic vinegar
- 1 tablespoon extra virgin olive oil
- 1 teaspoon agave nectar or honey
- pinch of kosher salt
- Pinch of ground pepper
Instructions
- Place the arugula and basil in a large serving bowl. Toss with the dressing until the leaves are coated.
- Arrange the strawberries, toasted almonds and goat cheese on top of the arugula. Toss before serving. Serve.
The dressing:
- In a small bowl, whisk together the balsamic vinegar, olive oil, agave nectar, salt and pepper until well combined.
Make ahead:
- If making the salad ahead of time, toss together the arugula, basil, strawberries, almonds and goat cheese. Store separately from the dressing. Toss the salad with the dressing before serving.
