Asian BBQ Chicken

If you're looking for a unique flavor for your next chicken dinner, try this Asian inspired BBQ Chicken. An easy homemade barbecue sauce covers this baked (or grilled) chicken.

Ingredients

Servings

Sauce:

  • 2 tablespoons vegetable oil
  • 6 chopped green onions (green and light part)
  • 1/3 cup grated ginger (with any juice)
  • 2 minced garlic cloves
  • ¼ cup brown sugar
  • 1 cup ketchup
  • ½ cup water
  • 2/3 cup hoisin sauce
  • ¼ cup rice vinegar (I used seasoned, but unseasoned is also ok)
  • 2 tablespoons soy sauce

Chicken:

  • 6 boneless chicken breasts
  • 1 1/4 teaspoons garlic powder
  • salt and pepper to season chicken breast

Instructions

For the Sauce:

  1. In a medium pot over medium heat warm oil and add in green onions. 
  2. Cook onions until softened and slightly brown, about 6 minutes. 
  3. Add in garlic and ginger, then cook an additional 30 seconds before adding remaining sauce ingredients.
  4. Bring sauce to a simmer and lower heat to medium low.
  5. Simmer for 5 minutes. Remove pot from heat and let cool to thicken.

For the Chicken:

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Season chicken breasts with salt, pepper, and garlic powder. Place on a greased baking sheet. 
  3. Bake for 30 minutes. 
  4. After 30 minutes, remove pan from oven and generously brush ginger barbecue sauce over chicken before returning to the oven for 10 more minutes or until chicken is juices run clear and barbecue sauce is sticky.
  5. Internal temperature of the chicken should be 165º Fahrenheit.
  6. Slice and serve over rice, veggies or on a salad.
  7. Top the chicken with sesame seeds and green onions if desired.

Notes

  • The calories shown are based on the recipe serving 6 and using all of the barbecue sauce. 1 serving would be 1 chicken breast with 1/6 of the sauce. For less calories, use sauce sparingly.
