Description

This sheet pan recipe involves chopping boneless, skinless chicken breast into bite-sized pieces and seasoning with salt and pepper. A sauce is prepared from tamari (or low sodium soy sauce), honey, fresh garlic, ginger, and chili paste. The chicken is combined with roughly chopped vegetables including yellow bell pepper, carrots, snap peas, and red onion and tossed in the sauce.

The mixture spreads evenly on a prepared baking sheet and cooks in a 400°F oven for 20 minutes in total, stirring halfway through, until the vegetables remain crisp but tender and the chicken is cooked through.   • 1 1/2 lbs boneless skinless chicken breast, chopped into chunks
  • 1 yellow bell pepper roughly chopped
  • 2 carrot peeled and chopped
  • 1 cup snap peas
  • 1/2 red onion roughly chopped
  • rice white, brown or cauliflower rice, cooked, for serving

Sauce

  • 1/4 cup tamari sauce low sodium, or soy sauce
  • 2 Tablespoons honey
  • 2 cloves garlic minced
  • 1 teaspoon ginger fresh
  • 1 teaspoon chili paste or garlic chili paste

Instructions

  1. Preheat oven to 400°F.
  2. Chop chicken into 1-inch, bite-size chunks and sprinkle with salt and pepper.
  3. Make sauce by combining tamari, honey, garlic, ginger and chili paste in a small bowl.
  4. Add bell pepper, carrots, snap peas, onion and chicken chunks into a large bowl. Toss with sauce.
  5. Prepare a large rimmed baking sheet with cooking spray or oil and place veggie and chicken mixture on the sheet.  Bake for 10 minutes, toss mixture and bake for another 10 minutes or until veggies are tender, but still crisp and chicken is cooked through. Remove mixture from baking sheet and serve over rice of choice.
