Ingredients
- 1/2 /2 cup olive oil
- 3 cloves garlic peeled and diced, fresh
- 2 (32 oz) (32 oz) cans San Marzano Tomatoes crushed (see notes)
- 1 cup water
- 1 tsp basil dried
- 1 tsp oregano dried
- 1/2 /2 tsp salt
- 1/4 /4 tsp black pepper
- 1 bay leaf dried
- 1 carrot see notes, whole
Instructions
- In a large saucepan, heat the olive oil over medium heat and stir in the chopped garlic. Allow the garlic to simmer for 1-2 minutes but do not let it brown.
- Add the crushed tomatoes and water and stir. When the sauce comes to a simmer, add the herbs and whole carrot.
- Turn the heat to low and let the sauce simmer for 20-30 minutes, stirring occasionally.
- Remove the carrot and bay leaf and discard.
- Serve the sauce immediately or store for later.
Notes
- Fresh tomatoes can replace canned ones by broiling, peeling, pureeing, and straining for sauce preparation.
- Add a whole carrot during simmering to reduce acidity unless using naturally low-acid tomatoes.
