  • 3 cloves garlic peeled and diced, fresh
  • 2 (32 oz) (32 oz) cans San Marzano Tomatoes crushed (see notes)
  • 1 cup water
  • 1 tsp basil dried
  • 1 tsp oregano dried
  • 1/2 /2 tsp salt
  • 1/4 /4 tsp black pepper
  • 1 bay leaf dried
  • 1 carrot see notes, whole

Instructions

  1. In a large saucepan, heat the olive oil over medium heat and stir in the chopped garlic. Allow the garlic to simmer for 1-2 minutes but do not let it brown.
  2. Add the crushed tomatoes and water and stir. When the sauce comes to a simmer, add the herbs and whole carrot.
  3. Turn the heat to low and let the sauce simmer for 20-30 minutes, stirring occasionally.
  4. Remove the carrot and bay leaf and discard.
  5. Serve the sauce immediately or store for later.

Notes

  • Fresh tomatoes can replace canned ones by broiling, peeling, pureeing, and straining for sauce preparation.
  • Add a whole carrot during simmering to reduce acidity unless using naturally low-acid tomatoes.
