Avocado Cilantro Lime Dressing

Ingredients

  • 1 avocado
  • 2 handfuls cilantro 40g
  • 6 tablespoons lime juice*
  • 1/2 cup yogurt 120ml
  • 1/2 cup water 120ml
  • 1/4 cup olive oil 60ml
  • 2 cloves garlic
  • salt and pepper to taste

Instructions

  1. Cut the avocado in half lengthwise, twist the two halves apart, remove the pit, and scoop out the flesh with a spoon. Discard the skin and the pit.
  2. Peel the garlic, wash the cilantro leaves and stems (we're using both), measure out all the other ingredients: olive oil, water, yogurt, and lime juice*.
  3. Add all the ingredients into a food processor.
  4. Blend until thick and smooth. Adjust the consistency of the dressing by adding more water to thin it out (if necessary). Season with salt and pepper to taste.

Notes

  • *Please note that the dressing should be a little bit on the sour side. It will be a little bit sour on its own but when served with other dishes, like grilled/pan-fried chicken, it will be just perfect. You may be even tempted to add some sweetener to it (like honey) but I don't recommend that, I've tried it and didn't like it. You can always start with 1/4 cup of lime juice and then add more if you like it.
  • Storage: You can store the dressing in the fridge for up to 3 days. Cover its surface with plastic foil to prevent browning.
