Avocado Shrimp Bites

These Avocado Shrimp Bites feature tender shrimp seasoned with a flavorful chili lime sauce, served over creamy guacamole and crisp slices of cucumber.

Ingredients

  • 1 pound jumbo shrimp peeled, deveined and tails off
  • 1 large english cucumber sliced
  • 1 batch Homemade Guacamole
  • ¼ cup sugar-free sweet chili sauce
  • 1 tablespoon lime juice
  • 2 teaspoons butter
  • 2 teaspoons olive oil
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions

  1. Add the shrimp, chili sauce, lime juice, smoked paprika, salt and ground black pepper to mixing bowl.
  2. Toss to combine, then cover with plastic wrap and marinate in the fridge for 1 hour.
  3. Prepare the Homemade Guacamole right before you are ready to sauté the shrimp, otherwise it can start to oxidize and turn brown.
  4. Heat a skillet to medium high and add in the olive oil and butter. Once melted, add in the shrimp and sauté for about 2 minutes on each side or once they just start to turn pink. You don’t want to overcook the shrimp or they will become rubbery very quickly.
  5. While the shrimp is cooking, slice up your cucumber. Ideally you want the same number of slices as you have shrimp. I was able to get 24 in my batch.
  6. Take a slice of the cucumber and spread some of the guacamole on top.
  7. Add one shrimp on top of the guacamole and garnish with some chopped cilantro.
