These Avocado Shrimp Bites feature tender shrimp seasoned with a flavorful chili lime sauce, served over creamy guacamole and crisp slices of cucumber.

Ingredients
- 1 pound jumbo shrimp peeled, deveined and tails off
- 1 large english cucumber sliced
- 1 batch Homemade Guacamole
- ¼ cup sugar-free sweet chili sauce
- 1 tablespoon lime juice
- 2 teaspoons butter
- 2 teaspoons olive oil
- 1 teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon ground black pepper

Instructions
- Add the shrimp, chili sauce, lime juice, smoked paprika, salt and ground black pepper to mixing bowl.
- Toss to combine, then cover with plastic wrap and marinate in the fridge for 1 hour.
- Prepare the Homemade Guacamole right before you are ready to sauté the shrimp, otherwise it can start to oxidize and turn brown.
- Heat a skillet to medium high and add in the olive oil and butter. Once melted, add in the shrimp and sauté for about 2 minutes on each side or once they just start to turn pink. You don’t want to overcook the shrimp or they will become rubbery very quickly.
- While the shrimp is cooking, slice up your cucumber. Ideally you want the same number of slices as you have shrimp. I was able to get 24 in my batch.
- Take a slice of the cucumber and spread some of the guacamole on top.
- Add one shrimp on top of the guacamole and garnish with some chopped cilantro.

- Makes about 24 bites, serving size 3 bites
