Bacon Cheeseburger Meatloaf

This bacon cheeseburger meatloaf is a cheeseburger without the bun! Great for low carb and keto diets, but also for meatloaf lovers! The pickles are tops!!!!

Ingredients
- 2 pounds lean ground beef
- 1 cup shredded cheddar cheese
- 2 lices thick cut bacon diced
- 1/2 large white onion shredded
- 2 tablespoons Worcestershire sauce
- 1-2 teaspoons seasoning salt
- 2 teaspoons garlic powder
- 1/2 cup diced pickles optional but good for pickle lovers!
Bacon Topping
- 4 lices thick cut bacon whole
- shredded cheese optional at the end
Suggested Toppings
- ketchup
- mustard
- relish not if making low carb
Instructions
- Pre-heat your oven to 350°F.
- In a large mixing bowl, combine all of the meatloaf ingredients until thoroughly mixed.
- Pat the ingredients into a large loaf pan.
- Place the bacon strips on top of the meatloaf.
- Bake in the oven for 50-60 minutes or until the meatloaf reaches 165°F in the center. If the bacon isn't crisped on top, turn the oven to broil and carefully broil the bacon until crispy, then remove.
- If desired, top with cheese and let melt, then top with ketchup and mustard. Slice and serve!
