  • 1 lb Bacon diced
  • 1 cup diced red onions
  • 1 cup diced jalapenos remove seeds to a milder jam
  • 2 tablespoon minced garlic 
  • ½ cup maple syrup
  • ¼ cup apple cider vinegar
  • 1 teaspoon paprika

Instructions

  1. In a large saucepan, cook bacon over medium heat.
  2. Transfer bacon to a plate lined with paper towel.
  3. Drain grease out of saucepan except 1 tbsp.
  4. Add onions, jalapenos, and garlic. Cook until onions become transparent.
  5. Reduce heat to low. Add maple syrup, apple cider vinegar, paprika, and cooked bacon. Stir well.
  6. Simmer for 1 hour, stirring often.
  7. If jam gets a bit too thick, add a small amount of water.
  8. Allow jam to cool before transferring it to sealable jars. Chill for an hour before serving.

Notes

  • Cook Low and Slow: Ensuring that the onions are caramelized and the other ingredients have cooked down and thickened properly is essential to achieving the right texture in your bacon jam.
  • Cool Completely: Before transferring the jam to sealable jars, allow it to cool. Not only does it make it easier to handle, it gives the flavors a chance to develop.
  • Make a Large Batch: This recipe is great when made in bulk! It lasts a couple of weeks in the refrigerator if stored properly, so feel free to double or triple it so you have extra on hand.
  • Storing: This jalapeno bacon jam should not be stored at room temperature. Once cooled, transfer it to a sealable jar and store it in the refrigerator for 2-4 weeks. I do not recommend freezing this recipe as it takes on a displeasing texture.
