Bacon Wrapped Smoked Sea Scallops

Bacon Wrapped Smoked Scallops are easy to make and are the best combination of smoky and salty flavor. This makes for a great meal or appetizer.

Ingredients

Servings
  • ½ cup olive oil
  • 1 dozen sea scallops
  • 2 teaspoons lemon pepper
  • 1 lb thin sliced bacon

Instructions

  1. Get out and measure your ingredients.
  2. Place scallops in resealable bag with olive oil and 1 -2 teaspoons lemon pepper to marinate.
  3. Seal bag then roll and massage bag gently to fully coat scallops
  4. Place bag in fridge for 1 hour to marinate.
  5. Place scallop onto one end of a thin slice of bacon. Wrap bacon around scallop allowing an overlap of about ½ inch. Cut bacon to fit perfectly.
  6. Push toothpick through bacon overlap and all the way through scallop to secure.
  7. Repeat on all scallops.
  8. Place bacon wrapped and secured scallops onto bradley rack or cookie sheet.
  9. Sprinkle lemon pepper liberally on outside of scallops.
  10. Place scallops directly onto smoker grate and cook for between 50-60 minutes at 250 degrees, and 145 degrees F in their center.
  11. Serve immediately.
  12. Enjoy every bite.
