Apple halves are topped with a cinnamon streusel topping and baked until tender.

Ingredients
- 4 medium apples any variety, 1 lb
Topping
- ¾ cup oats regular or quick
- ½ cup brown sugar
- ½ cup Chopped Pecans optional
- ⅓ cup butter softened
- ¼ cup all-purpose flour
- 1 teaspoon cinnamon
Instructions
- Preheat the oven to 375°F.
- Cut the apples in half, top to bottom. Use a small spoon to scoop out the seeds and a little bit of the apple. Place apples in a 9x13 baking pan, cut-side up.
- Combine the topping ingredients in a medium bowl and mix with a fork until the mixture begins to stick together.
- Place a generous portion of the topping on each apple.
- Cover the pan with foil and bake for 10 minutes. Uncover and bake for an additional 15-20 minutes (*see note) or until the apples are tender and the topping is lightly browned.
- Cool for 5 minutes before serving. Serve with vanilla ice cream and caramel sauce if desired.
Notes
- *Important! Different varieties of apples will have varying cook times. Check the apples early and cook just until tender. If the apples are overcooked, they may burst out of the skins. Softer varieties should be cooked in about 25-30 minutes (total cooking time) while firmer apples may need about 45-50 minutes.
- If you have an apple corer, core the apples before cutting.
- Don't peel the apples, the skins hold it all together.
- If preparing ahead of time brush the cut side of the apples with a bit of lemon juice to keep them from browning.
