Baked Blueberry Cream Cheese French Toast Recipe

Ingredients

Cream Cheese Filling

  • 1 cup cream cheese 8 ounces / 225 g, softened
  • 1 tablespoon granulated white sugar
  • 1 teaspoon lemon juice
  • Zest of 1 medium lemon

French Toast Bake

  • 4 large eggs, beaten
  • 2 cups whole milk 500 ml / 16.9 ounces
  • ½ cup granulated white sugar 100 g / 0.22 lbs
  • 2 tablespoons unsalted butter, melted
  • cup honey 30 ml / 1 ounce
  • 1 teaspoon ground cinnamon
  • 2 teaspoons vanilla extract
  • ¼ teaspoon sea salt
  • 1 loaf brioche bread, sliced (500 g / 1.1 lbs)
  • 1 cup of fresh blueberries oz/ 200 g
  • 2 tablespoons white sugar

Instructions

  1. Get out and measure all of your ingredients.
  2. Grease a 10.6 x 7 inch baking dish with butter and set aside.
  3. Slice your loaf of bread, as evenly as possible if it's not already.
  4. In a small bowl, stir cream cheese, sugar, lemon juice and lemon zest together until well combined.
  5. In a large bowl, whisk eggs, milk, sugar, butter, honey, cinnamon, vanilla and salt together.
  6. Soak 2 brioche slices on both sides and arrange next to each other in the baking dish.
  7. Repeat until no brioche is left. Brioche must overlap each other.
  8. Now push each brioche slice with your fingers and spread cream cheese in between them. Cover with a foil and place in the refrigerator for at least 1 hour.
  9. When ready, preheat the oven to 350 F / 175 C. Remove from the refrigerator and top with fresh blueberries and sprinkle white sugar. Place on a baking tray and bake in the lower part of the oven for the first 20 minutes then in the middle for the last 25 minutes.
  10. Remove and let cool down a bit before serving.
  11. Serve with honey, syrup, butter, fresh blueberries and ice cream.

Notes

  • Store in refrigerator for up to 4 days, including the day you made it.
