Ingredients
- 3 pounds orange yams peeled and cut in half/cubed or other sweet potato
- 6 tablespoons butter melted
- ¾ cup brown sugar
- ⅔ cup white sugar
- 1/3 cup orange juice
- 1 tablespoon vanilla extract
- 1 ½ teaspoons cinnamon
- ¼ teaspoon ginger
- ¼ teaspoon nutmeg
- ¼ teaspoon ground cloves
- ¼ salt
Instructions
- Grease a 9×13 baking dish with cooking spray. Preheat the oven to 375 degrees.
- Peel the yams with a peeler. Slice the yams in half the long way. Slice into half in half moon shaped pieces. Add all yams to the baking dish.
- In a medium-sized bowl add the melted butter, brown sugar, white sugar, orange juice, vanilla extract, cinnamon, ginger, nutmeg, ground cloves, and salt. Stir until well mixed.
- Pour the butter and sugar mixture over the yams. Gently stir to coat the yams evenly with butter.
- Place the baking dish in the oven and bake for 30 minutes.
- Remove the baking dish and baste the yams with the butter sauce with a silicone brush or spoon.
- Return the baking dish to the oven and bake for an additional 15-20 minutes or until sweet potatoes are golden and tender when pierced with a fork. Serve and enjoy! The sauce will continue to thicken as the yams begin to cool.
Notes
- In the US all “yams” are in fact sweet potatoes but are often labeled yam in the grocery store. Look for a fleshy orange yam or sweet potato for this recipe. Other colors of sweet potatoes such as ruby red, purple or white work for this recipe. Traditional Caribbean “yams” with a rough outer skin do not work as well for this recipe.
- As the sweet potatoes cool the sauce will become slightly thicker. If you prefer more of a liquidy glaze, use 1/2 cup orange juice instead of 1/3.
- Add marshmallows to your candied yams if you prefer. After cooking is finished Increase the temperature in the oven to 450. Add 3-4 cups of mini marshmallows to the top of the yams. Bake for 2-3 minutes or until the marshmallows have just begun to brown.
