Baked Chicken Thighs

Incredibly moist Baked Chicken Thighs have a delightfully crispy skin and are baked on a medley of fresh rainbow veggies!

Ingredients

  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 3 pounds bone-in skin-on chicken thighs (about 8)
  • 2 medium carrots peeled and sliced
  • 1 red bell pepper chopped
  • 1 medium zucchini sliced
  • 1 red onion cut into 1-inch squares
  • 1 broccoli crown cut into florets
  • 2 tablespoons olive oil
  • salt and pepper to taste

Instructions

  1. Preheat your oven to 400 degrees F.
  2. Spread the vegetables on a large baking sheet. Drizzle with olive oil and season with salt and pepper. Toss to coat before spreading into an even layer. Set aside.
  3. In a small bowl, stir together the garlic powder, paprika, Italian seasoning, and salt. Sprinkle the seasoning mix all over both sides of the chicken thighs. Place the chicken thighs skin side up on top of the vegetables.
  4. Roast for 30-35 minutes, until the chicken is cooked through (165 degrees F internal temperature) and the veggies are tender. Remove from oven and serve warm.
