Baked Cubano Chicken
Description
The chicken breasts are placed on seasoned black beans in a casserole dish, then brushed with yellow mustard and layered with sliced ham and pork carnitas. Baking uncovered at 400°F cooks the chicken while allowing the flavors to blend. After initial baking, dill pickle slices and Swiss cheese are added on top and the dish returns to the oven briefly to melt the cheese and let the pickles warm slightly.
The contrast of the tender chicken with smoky ham, pork carnitas, and sharp cheese creates a complex profile reminiscent of the classic Cubano sandwich fillings. The black beans underneath provide a hearty base with seasoning to complement the meat layers.
For even cooking, thick chicken breasts may be butterflied and pounded to uniform thickness. Using an instant-read thermometer ensures the chicken reaches 165°F. Resting after baking allows juices to redistribute, improving tenderness and flavor.
Ingredients
- 2-15 oz black beans canned
- 1 tsp adobo seasoning
- 4 chicken breast 2 lbs boneless and skinless
- 1/4 cup yellow mustard
- 8 ham sliced
- 2 cups pork carnitas
- 8 dill pickle long slices
- 12 swiss cheese slices
Instructions
- Preheat oven to 400°F.
- Place the black beans in a rectangle 9x12" casserole dish that has been sprayed with cooking spray or vegetable oil and sprinkle with 1/2 teaspoon of the Adobo Seasoning.
- Layer the chicken breasts on top of the black beans and season with remaining Adobo seasoning. Baste the chicken with the yellow mustard.
- Add 2 slices of ham on top of each chicken breast, then half a cup of the carnitas.
- Bake uncovered for 30 minutes, depending on the thickness of your chicken breasts. (See Note 1)
- Remove from oven and add 2 dill pickles and then 2 Swiss cheese slices to each piece of chicken. Put it back in the oven, uncovered for 5 minutes. Allow to rest 5 minutes before slicing or serving.
Notes
- If chicken breasts are thicker than one inch, slice them horizontally and pound to an even thickness for uniform cooking.
- Use an instant-read thermometer to confirm chicken is cooked to an internal temperature of 165°F for food safety.
