Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Cut the potatoes into wedges, leaving the skins on for extra texture and flavor.
  3. In a large bowl, toss the potato wedges with olive oil, minced garlic, oregano, salt, and black pepper until evenly coated.
  4. Spread the wedges in a single layer on the prepared baking sheet, making sure they aren’t overlapping.
  5. Bake for 25-30 minutes, flipping the wedges halfway through, until they’re golden brown and crispy on the outside and tender on the inside.
  6. Remove from the oven and immediately sprinkle the baked potato wedges with grated Parmesan cheese.
  7. Garnish with fresh parsley, if desired, and serve hot.

Notes

  • You can use other types of cheese like Asiago or Romano for a different flavor twist.
  • For extra crispiness, sprinkle the wedges with a bit of cornstarch before baking.
  • Add a little cayenne pepper or red pepper flakes to the seasoning mix for a spicy kick.
  • These potato wedges are delicious on their own, but you can also dip them in ketchup, ranch dressing, or your favorite dipping sauce.
  • Leftovers can be stored in an airtight container for up to 2 days. Reheat them in the oven to keep them crispy.
  • For a more flavorful version, marinate the potato wedges in olive oil, garlic, and seasonings for 30 minutes before baking.
